Oaty Carrot Cookies

Easy way to boost your child's vegetable intake!

Makes: 4 Ice-blocks


Nutrition Benefits - This snack contains:


  • Vitamin A - helps maintain vision and immune function
  • Vitamin C - Supporting the immune system
  • Fibre - Supports a healthy gut and regular bowel motions
  • Antioxidants - Protects our bodies against cell damage.



Ingredients:


  • 1 cup of oats ( selected oats with chia seeds) 
  • 2 Carrots  grated finely (1 cup)
  • 1/2 Cup of Apple Puree
  • 1 Tbsp melted Butter
  • 2 Tbsp Honey
  • 1 Tsp Cinnamon


Method:


  1. Preheat oven to 180 Degrees Celsius. Line a large tray with baking paper. 
  2. Add carrots, apple puree, melted butter and honey in a large mixing bowl. Stir until ingredients evenly mixed. 
  3. Add into bowl cinnamon, oats and stir until combined
  4. Taste, and if needed you can add in more honey if you wanter a sweeter cookie.
  5. Scoop 1 tbsp of mixture and roll into a ball. Continue to roll balls and place them evenly spaced onto the baking tray. 
  6. Using the back of the fork, flatten the cookies
  7. Place cookies in the oven and cook for 12-15 minutes or until golden brown
  8. Let the cookies cool and Enjoy!



Optional: You can add in other goodnes to the cookie such as chopped nuts, chocolate chops or even sultanas for a different flavour. 


TIPS: Grate Carrot Finely and blitz oats if you want a smoother textured cookie.
